For 23 years the Hawaii Jiangsu Zhejiang Shanghai Association holds the most prestigious Chinese cooking contest in Hawaii. This year, on Labor Day, 27 dishes were entered from not only local restaurants but from home kitchens as well. Judging was based on smell, color, taste, setting and nutrition. Current emphasis is on healthy dishes using less oil, less sugar, and less salt. One of the top prizes went to LSHT's very own Evagold Yip for her all vegetarian "fake fish" dish. Evagold describes her dish as one side having fried fish and the other side having black bean sauce. The "yin and yang" of flavors brought harmony to the dish.
